A CALIFORNIA TRADITION COMES TO THE EAST COAST
Santa Maria BBQ dates back to the 1800’s when California cattle ranchers would prepare feasts for their vaqueros during Spring by grilling whole sections of top sirloin on rods over live coals. Today, a typical Santa Maria BBQ plate consists of seasoned beef tri-tip steak cooked over California red oak, pinquito beans (a hybrid of pink beans and white beans), fresh tomato salsa, green salad, and grilled french bread.
Bishop’s Smoke and Grill is the ONLY provider of authentic Santa Maria BBQ on the East Coast. We use red oak sourced locally from Montgomery County, MD and ship many of our other ingredients directly from Santa Maria, CA.
